Preheat oven to 450°F. Peel and slice the Sweet Potatoes lengthways into 8 wedges. Toss wedges with oil. Add the rest of the ingredients and toss until the sweet potatoes are coated. Place wedges on a greased cookie sheet and bake for 25 minutes. Flip halfway through cooking time.
For a variation, glaze with ginger marmalade, instead of the herbs.
