How We Do It
Our sweet potatoes are planted in June, in the rich fertile loam soils along the north shore of Lake Erie. The natural minerals and organic matter in our land adds to their rich orange colour and distinct flavour.
Through to August they size up. In our northern climate the formation of sweet potato roots during these cooler days of late summer facilitate a texture that is smoother than their southern cousins.
In September we harvest with utmost care to protect the skin.
After harvesting they are cured in a specially designed building, with controlled temperature and humidity, to enhance their sweetness, set their skins, and extend their shelf life.
Before sending to market, they are stored in a climate controlled atmosphere to maintain quality. Special bins allow maximum air circulation and eliminate mold. Here in Ontario, insecticide is not needed during storage.
Just hours before delivery, they are washed and hand packed to ensure freshness.
Finally, the boxes are delivered from farm to market in a matter of hours, minimizing carbon emissions.
