Pancakes & Apple Pecan Topping Recipe

Ingredients
  • 6 cups peeled, shredded Ontario Sweet Potatoes 
  • ¼ cup all-purpose flour 
  • ½ tsp baking powder 
  • ¼ tsp ground cinnamon 
  • ¼ tsp ground cloves 
  • 1 tbsp honey 
  • 1 egg 
Directions

Beat egg. Mix in shredded Ontario Sweet Potatoes, flour, baking powder, cinnamon, cloves, and honey. Heat a non-stick pan (coat if necessary with non-stick cooking spray).
Shape mixture into thin patties. Cook over medium heat, turning once, until golden brown on both sides. Serve with Apple-Pecan Topping, or your favourite pancake topping.

Apple-Pecan Topping

Mix together:
  • ½ cup brown sugar 
  • ¼ cup chopped pecans 
  • 2 apples, peeled, cored, and diced 
  • l tbsp orange juice 
  • ¼ tsp ground cinnamon 
  • ¼ tsp ground cloves
