Ingredients
- 2,1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/4 cup sugar
- 1/4 tsp each: ground cinnamon, nutmeg, cloves
- 2 cups cooked and mashed Ontario Sweet Potatoes
- 4 tbsp light margarine, melted
- 1 tsp vanilla
Directions
Preheat oven to 450degrees F. In a large bowl, combine flour, baking powder, salt, sugar, cinnamon, nutmeg and cloves. In another bowl, combine sweet potatoes, margarine, and vanilla. Add to flour mixture, and stir until just moistened. Turn out onto a floured surface and knead ten times. Roll dough to a 1/2 inch thickness. Cut out with a 2 inch round flour cutter. Baked on a greased baking sheet for 12-15 minutes. Makes 2 dozen.
For special occasions, use fun-shaped cookie cutters.
Delicious served with butter or honey.
